1 tl fijn geraspte schil van een biologische citroen
1 tl citroensap
250 g spinazie
2 sjalotjes
1 teentje knoflook
4 el olie voor het bakken

4 zalmfilets van 150 g per stuk (panklaar, zonder graten)
Roer de bijna zachte boter met de misopasta, de fijn geraspte citroenschil en het citroensap tot een glad mengsel.*Leg het midden op een stuk huishoudfolie. Rol de folie strak op, zodat er een rol ontstaat, en draai de zijkanten zoals bij een toffee. Leg de rol in de koelkast.
Maak de spinazie schoon, was de blaadjes en laat ze uitlekken in een vergiet. Pel en snipper de sjalotjes en het teentje knoflook. Verhit 1 el olie in een grote pan en fruit de sjalot en knoflook erin tot ze glazig zijn. Voeg de spinazie toe. Strooi er zout op en schep de blaadjes spinazie om tot ze geslonken zijn. Voeg zo nodig nog wat zout toe en houd de spinazie warm.
Gril de repen zalmfilet boven hete kooltjes of bak ze in een pan met een antiaanbaklaag in 3 el olie. Reken 3 tot 4 m per kant. **/***

Risotto met asperges, citroen & munt
Voor ➍ personen50 cl groentebouillon
2 el olijfolie
½ grote ui, geschild & fijngehakt
2 stengels bleekselderij, bijgesneden &fijngehakt
200-250 g risottorijst
10 cl vermout of droge witte wijn
1 bosje asperges, houtige uiteinden verwijderd
35 cl extra groentebouillon
25 g boter
1 klein handvol Parmigiano, vers geraspt, plus een blok om te raspen
½ bosje verse munt, blaadjes geplukt & fijngehakt
1 citroen, schil & sap
zeezout & versgemalen zwarte peper
extra vergine olijfolie
Hak de asperges in kleine schijfjes en houd de kopjes heel. Breng de bouillon aan de kook in een pan. Doe de olijfolie in een aparte grote pan, voeg de ui en bleekselderij toe en bak heel zachtjes ongeveer 15 m, zonder ze te bruinen, tot ze zacht zijn.
Voeg de rijst toe en zet het vuur hoger. Laat de rijst of groenten niet op de bodem van de pan kleven, dus blijf bewegen. Giet snel de vermout of wijn erbij. Blijf roeren tot het verdampt is.
Voeg de bouillon stap voor stap toe aan de rijst, roer en wacht tot hij volledig is opgenomen voordat je de volgende toevoegt. Zet het vuur laag, zodat de rijst niet te snel kookt, anders wordt de buitenkant van elke korrel stug en de binnenkant hard en nootachtig. Voeg je soeplepels bouillon toe totdat alles is opgenomen. Dit duurt ongeveer 14 tot 15 m ** en levert rijst op die zacht begint te worden maar nog een beetje beetgaar is. Zet opzij.
Zet een grote pan op middelhoog tot hoog vuur en giet ½ van de extra bouillon erbij, gevolgd door de risottobasis, de fijngesneden asperges en de kopjes. Onder voortdurend roeren zachtjes aan de kook brengen, dan het vuur laag zetten en laten sudderen tot bijna alle bouillon is opgenomen. Voeg de rest van de bouillon stapsgewijs toe tot de rijst en asperges gaar zijn. Je hebt misschien niet al je bouillon nodig.
Zet het vuur uit, meng de boter en Parmigiano erdoor, munt, bijna alle citroenschil en al het sap. ** Controleer de smaak en voeg eventueel zout en peper toe. Doe een deksel op de pan en laat de risotto 1 m rusten.
Serveer met een scheutje olijfolie, wat citroenschil. Voorzie een blokje Parmigiano om extra te raspen.
* U kunt ½ van de kaas vervangen door een beetje geplukt krab- of kreeftvlees of verse, gepelde garnalen of in plakjes gesneden Sint-Jakobsschelpen.
** Pas de kooktijden aan uw rijstsoort aan. De asperges hebben ongeveer 8-15 m nodig om beetgaar te zijn.

citroenboter:
250 gr boter, zacht
1 rood pepertje zonder pitjes, fijn gehakt
2 tenen knoflook, fijn gehakt of geperst
geraspte schil van 2 onbehandelde citroenen,
Meng de ingrediënten van de citroenboter bij elkaar. Draai er een rol van in cellofaan. Leg in de ijskast of in de diepvriezer om op te stijven.
Maak preistengels schoon. Snij overlangs. Snij in repen. Stoom 6 m. Voeg peper en zout toe.
Dep de Sint-Jacobsvruchten droog met keukenpapier.
Verhit 1 el olijfolie in de pan. Bak Sint-Jacobsvruchten 2 m aan 1 kant en 1 m aan de andere kant.
Voeg plakjes citroenboter toe. Schep de smeltende boter over Sint-Jacobsvruchten.
Schik de preirepen op borden, leg er per bord 3 Sint-Jacobsvruchten op, lepel citroenboter er over.
Werk af met peterselie en plakjes citroen*.
*Eventueel.
Zen risotto
For ➍*225 g butter
1 clove garlic, chopped
225 g fresh shallots, chopped
50 g fresh oregano, chopped
8 bay leaves
450 g shiitake, torn**
1 kg Arborio rice***
50 cl dry white wine
1 l warm chicken stock (not boiling)****
20 cl olive oil
50 g parsley
100 g grated Parmigiano cheese
Add shiitake and cook for 5 m.
Add rice and stir to coat. Add wine and simmer until most of the wine is absorbed.
Stir in stock in small portions until rice is ready (20 m). It might not be necessary to use all stock***.
Put on serving plates, with a few spots of olive oil, add parsley. Add Parmigiano.
*As a main dish. Half the quantities as an entrée or side-dish.
**When using dried shiitaken let them simmer in boiling water for 40 m. Use the liquid as apart of the stock.
***Or any slow cooking risotto rice. Not suitable for sushi rice if creamy aspect is wanted.
****Use a vegetable stock to make this a veggie dish. Probably you'll need only 70 cl. Save excess fluid to make another dish.

Kalafior (Poolse bloemkool)

3+1 tbs butter
1 cauliflower (about 500 g)
salt & pepper
4 eggs*
4 tbs chopped dill
4 tbs bread crumbs
Melt butter in a frying pan. Lightly brown cauliflower florets. Add salt and pepper to taste.
Meanwhile, melt some butter and brown bread crumbs. Spread over paper towel to drain excess fat.
Arrange cauliflower florets on a serving dish.
Sprinkle with chopped boiled eggs, dill and buttered bread crumbs.
Serve with salted boiled potatoes and veal or as a starter.
*Make this a vegetarian dish by adding sour cream instead of eggs.
Cauliflower is one of the main agricultural products of Poland, with more than 250,000 tonnes a year. It was introduced by a duchess of Bari turned queen of Poland in 1517, Bona Sforza. Bored by the Polish diet, she imported cauliflower, celery, leeks, asparagus, lettuce and artichokes into cultivation.
Boulestins 'cod brétonne' (kabeljauw toast)
➍ personen 750 g white fish fillet*
1 tbs minced shallot
25 cl white wine & water**
1 tbs olive oil
50 g soft butter
50 g flour
1 tbs chopped parsley
salt & pepper
4 toasts, buttered
Mix butter and flour into a beurre manié. Cut into small chunks and set aside.
Bring water and wine to a boil. Put fish, shallot, salt & pepper in. Cook on high heat for 5 m, stirring with a wooden spoon to flake the fish.
(Be sure to have the liquid evaporated.)
Off heat, add the beurre manié.
Return to heat for 2 m.
Add parsley.
Pile onto 4 buttered warm toasts***.
Serve with a glass of Muscadet white wine.****
*The original 1920's recipe used rinsed salt cod. All firm white fish will do.
**Use cider instead. Start with a smaller amount, so the liquid evaporates within 5 m.
***Add a little anchovy paste on the bread before putting the fish on.
****Serve with potatoes or rice instead.

French writer Marcel Boulestin turned restaurateur in 1911 when he opened a classy French restaurant in London's Covent Garden. In the interbellum, he became one of the first media celebrity chefs, appearing in a, still experimental, BBC television broadcast in 1937. He wrote for Vogue and published several best selling cook books with free adaptations of French recipes, which were served in his art deco revamped restaurant. His influence was still felt in the 1970's when Georgina Horley quoted this recipe in her popular Good food on budget.
Risotto met asperges, munt & citroen
For ➑risotto base:
1 l organic vegetable or chicken stock
2 tbs olive oil
1 large onion, peeled & finely chopped
4-5 sticks celery, trimmed & finely chopped
600 g risotto rice
25 cl vermouth or dry white wine
risotto:
2 bunches asparagus, woody ends removed & discarded
70 cl organic vegetable or chicken stock
50 g butter
1 small handful Parmigiano cheese, freshly grated, plus a block for grating*
1 bunch fresh mint, leaves picked & finely chopped
zest & juice of 2 lemons
sea salt & freshly ground black pepper
extra virgin olive oil
Slice the asparagus stalks finely sliced to 2.5 cm below the tips. Finely chop your asparagus stalks into tiny discs, keeping the tips whole.
Then start making your basic risotto recipe.
Bring the stock to a simmer in a saucepan. Put the olive oil in a separate large pan, add the onion and celery and cook very gently for about 15 m, without colouring, until soft. Add the rice (it will sizzle) and turn up the heat. Don't let the rice or veg catch on the bottom of the pan, so keep it moving.
Quickly pour in the vermouth or wine. You will smell the alcohol immediately, so keep stirring all the time until it has evaporated, leaving the rice with a lovely perfume.
Add the stock to the rice a ladle at a time, stirring and waiting until it has been fully absorbed before adding the next. Continue to add ladlefuls of stock until it has all be absorbed. This should take about 14 to 15 m and give you rice that is beginning to soften but is still a little al dente. Put aside.
Put a large saucepan on a medium to high heat and pour in half the stock, followed by all your risotto base and the finely sliced asparagus stalks and the tips. Stirring all the time, gently bring to the boil, then turn the heat down and simmer until almost all the stock has been absorbed. Add the rest of the stock a ladleful at a time until the rice and asparagus are cooked. You might not need all your stock. Be careful not to overcook the rice. It should hold its shape but be soft, creamy and oozy, and the overall texture should be slightly looser than you think you want it.
Turn off the heat, beat in your butter and cheese, mint, almost all the lemon zest and all the juice. Check the seasoning and add salt and pepper if needed. Put a lid on the pan and leave the risotto to rest for 1 m.
Serve with a drizzle of olive oil, a scattering of lemon zest and a block of Parmigiano on the table.
*Make a non-vegetarian variation with sprinkling in a little picked crab or lobster meat or fresh, peeled prawns or sliced scallops. Reduce your cheese by half.

Erwtenrisotto
For ➍6 tbs olive oil
½ onion, finely chopped
200 g Arborio rice
5 dl vegetable stock
100 g cooked peas
100 g (salted) butter
Heat a little oil in a pan over a gentle heat and fry the onion until soft. Add the rice and toast for 5 m. Slowly add vegetable stock, stirring continuously. Half way through the cooking time, add the peas and season with salt and pepper to taste. Once cooked (20 m), remove from heat and stir in the butter to create a creamy texture. Taste the seasoning and adjust if necessary.
Serve with the Coniglio al Vesuvius, a rabbit stew.

Jagermeestersaus

60 g bloem
3,5 dl bouillon
s sneden spek, stukjes
1 ui
1 wortel
1 tak selder
pili-pili, Spaanse peper of paprika
1 dl ontvette braadjus
1 dl rode wijn
3 el rodebessengelei*
Maak een roux van de bloem en boter.
Spek, ui, wortel en selder stoven. Voeg bij de roux. Voeg pili-pili toe.
Afwerken met braadjus, rode wijn en gelei.
*Eventueel.
Gebruik bij wild zoals hert.
