♥︎ Bakplaat van reuzenbonen met ratatouillegroenten & pistou

Voor ➍ personen
2 blikken witte reuzenbonen (à 400 g), afgespoeld & uitgelekt
2 rode uien, geschild, elk in 8 parten
2 rode paprika’s, in stukken
1 aubergine, in stukken
1 courgette, in stukken
4 kleine trostomaten, elk in 4 parten
3 tenen knoflook, in dunne plakjes
2 el rozemarijnnaaldjes, grof gesneden
1 rode chilipeper, in ringetjes
snuf chilivlokken
zout & peper
4 el olijfolie
pistou*:
80 g pijnboompitten
40 g basilicum
1 teen knoflook, fijngesneden
10-12,5 cl olijfolie

Verwarm de oven voor op 200 °C.
Doe de bonen, alle groenten, de knoflook, rozemarijn, chilipeper en chilivlokken, vier eetlepels olijfolie, een goeie snuf grof zout en een snuf peper in een schaal en hussel. Verdeel het mengsel over twee met bakpapier beklede bakplaten.
Schuif de bakplaten in de oven en laat 45 à 60 m roosteren, tot de groenten zacht zijn en de bonen juist een beetje knapperig. Wissel de bakplaten halverwege even om, zodat ze allebei evenveel boven- en onderwarmte krijgen.
Rooster voor de pistou de pijnboompitten in een droge koekenpan tot ze mooi lichtbruin zijn. Houd 12 blaadjes basilicum apart. Doe de rest van de basilicumblaadjes, de knoflook en de helft van de pijnboompitten in de mengkom van de keukenmachine en pulse een paar keer. Schenk vervolgens terwijl de machine draait, in een straaltje, zoveel olie bij als nodig is voor een lopende saus. Proef en maak de pistou op smaak met zout en peper.
Schep de bonen en groenten over op een serveerschaal. Strooi er de rest van de pijnboompitten en de achtergehouden basilicumblaadjes over. Geef de pistou apart erbij.

*Pistou is de Provençaalse variant van Italiaanse pesto, zonder Parmezaanse kaas.
